This new-harvest oil holds a special place in our hearts, as we carefully select the healthiest trees to be used for the first harvest. It represents the beauty and youth of that first day of the new harvest, one of the most exciting moments of the season.

Early-harvest olives have an intense green color and contain a high concentration of chlorophyll and polyphenols, resulting in a potent extra virgin olive oil with extraordinary character and flavor.

This oil boasts a very interesting complexity. The nose is characterized by a medium-green fruitiness, both herbal and fruity. The fruits we find are reminiscent of tomato plants and green almonds. As for herbaceous notes, we highlight notes of freshly cut grass and aromatic herbs. An oil of medium fluidity, with a persistent palate of artichoke, olive leaf, nuts, and an intense green walnut flavor. A very balanced oil with exquisite complexity.
